80g flaxseed meal
25g flaxseed
3 tbsp. chia seeds
1 1/2 tbsp. tapioca starch (serve as a thickener)
2 tbsp. rice malt syrup (you can add maple syrup or honey if desired)
1 tsp. sodium bicarbonate
1 tsp. vanilla extract (optional)
4-5 large eggs
1 tsp. raw sugar
Directions
- Mix all dry ingredients (almond meal, flaxseed meal, flaxseed, chia seeds, salt, tapioca starch, and bicarbonate) together.
- In another bowl, whisk the eggs, rice malt syrup, and vanilla extract.
- Combine wet and dry ingredients together and transfer to a bread pan.
- Sprinkle raw sugar on the bread batter mix.
- Bake at 170 degrees Celsius for 30 – 45 mins or until a wooden or metal skewer inserted in the middle comes out clean with little sticky crumbs.
