Delicious unripe plantain pottage |
Ingredients
4 large unripe plantain
Dried catfish (or choice of fish)
1 tbsp. blended crayfish
1 tbsp. palm oil
1 large onion
3 red chili
1 cup of water
1 bouillon cube
1 tsp. black pepper
Salt to taste
Raw prawns
Wooden skewers
1 tbsp. honey
Olive oil
Kale (or choice of veggie)
Fresh parsley to garnish
Instructions
Unripe plantain pottage
- Parboil the dried catfish for 5 mins, drain water and place back into a pot of fresh water.
- In the pot of water with catfish, add the bouillon cube, crayfish, two (2) minced red chili, palm oil, salt and sliced onion. Bring to boil for about 7 mins.
- Chop the plantain into small chunks and combine with the boiling water. Stir and allow to boil for about 18 mins - 20 mins.
- Add the kale leaf or choice vegetable and cook for 2 mins.
- Turn off gas stove and serve.
- Garnish with fresh parsley.
Honey Chili Prawn Skewers
- In a bowl, combine the raw prawn with honey, salt, black pepper and minced chili.
- Thread the prawn onto the wooden skewers and set aside.
- Shallow fry the prawns in a frying pan with little olive oil for 2-3 mins on either side.
