- 1/4 cup of canola oil
- 500g minced beef
- 1 teaspoon cinnamon
- 1 tablespoon black mustard seeds
- 1 teaspoon black pepper
- 1 large red onion, chopped
- 1 teaspoon garlic powder
- 1teaspoon cameroon pepper
- 2 tins coconut milk
- 2 large dried catfish, washed and shredded
- 2 cups of rice
- 2 medium-sized Irish potatoes, chopped
- 3 large carrots, chopped
- Kosher salt (pinch)
- 1 teaspoon turmeric
- Bouillon cubes (chicken knor cubes)
- In a rice cooker or pot, season the washed rice with turmeric, cameroon pepper, coconut milk, garlic powder, and knor cubes. Simmer until rice is a bit soft (not too soft) and the liquid completely dry.
- Heat up 2 teaspoons of oil over medium-high heat. Season the minced beef with black pepper, salt and ½ knor cube.
- Add the potatoes to the minced beef and cook, stirring, until cooked, 5 to 10 minutes. When ready, set aside.
- Heat the remaining oil over medium- high heat. Add 1 tablespoon black mustard seeds, onion and 1 teaspoon cinnamon for about 3 to 5 mins.
- Add the minced beef, shredded dried catfish, and knor cubes. Allow to fry for 7 - 10 minutes stirring continuously.
- Transfer the cooked rice to the minced beef sauce and combine.
- Toss in the chopped carrots, stir and turn off the gas stove after 3 minutes.
