No Plain Flour: Rolled Oats Banana Bread


I'm not a bread fan but since I started making banana bread, I have grown to love it! You can see I LOVE banana bread from several of my pics. Anytime I make these delicious bread, I explore different ingredients and either way, it comes out good.  Two recipes I enjoy is my standard banana bread and the other is banana coconut bread which I would share with you today.

Banana coconut bread



Ingredients
Normal Banana Bread
          1 cup blended rolled oats
          2 large eggs
          3 large ripe bananas
         1/4 unsweetened almond milk (or choice of milk)
          2 tbsp. honey
          1 tsp cinnamon
          1/2 baking powder
          1 baking soda
          Pinch of salt
         Pepitas or rolled oats for topping
        

Banana Coconut Bread
           1 cup blended rolled oats
          2 large eggs
          2 tbsp. coconut flour
         1/4 unsweetened almond milk
         3 tbsp. desiccated coconut
         1 tbsp. coconut oil
          3 large ripe bananas
          11/2 tbsp. honey
1 tbsp. coconut sugar
          1 tsp cinnamon
          1/2 baking powder
          1 baking soda
          Pinch of salt

 Preparations
  • Preheat the oven to 350 degrees F.
  • In a bowl the dry ingredients (rolled oats, baking soda, baking powder, cinnamon, and salt) and set aside. In the case of coconut banana bread, add two (2) tablespoons of coconut flour to the mixture.
  • In another bowl, mix the wet ingredients (mashed banana, eggs, and honey). For coconut banana bread, add the almond milk or milk of choice and coconut oil.
  • Combine the dry and wet ingredients together. At the stage, combine the mixture with the desiccated coconut if you are making the coconut flavor bread. The addiction of one (1) tablespoon of unsweetened peanut butter does justice to the mixture as well.
  • Pour the batter mixture into a greased baking bread pan, add the toppings of choice (unblended rolled oats, pepitas, or desiccated coconut) and place in the oven.
  • Bake for 45- 60 mins or until a toothpick inserted in the center comes clean.
  • Serve with greek yogurt or scrambled eggs.
