Lamb Plantain Peppersoup Pottage


This is a delicious and easy recipe for those that love pepper soup. In this recipe, I used lamb meat which can be substituted with GOAT meat.


Ingredients

Onion
3 garlic cloves
3 unripe plantain
2 red chili pepper
Blended pepper soup spice
Knorr cube
Salt 
Fresh basil (substitute – scent leaf)

Lamb (nicely diced)

Instructions
  • Blend the onion, chili pepper, and garlic cloves in a blender with little water.
  • Pour the blend into a pot, add the diced lamb or goat meat, a pinch of salt and Knorr. Simmer for 5 mins for all the spices to combine thoroughly.
  • Add 11/2  cup of water to the meat and taste. Add more seasoning if need be.
  • Cook for another 10-30 mins depending on the kind of meat (I used soft lamb hence 15 mins).
  • Chop the plantain into large chunks and add it to the boiling pepper soup. Cook for another 20 mins.
  • Add the chopped basil or scent leaf and stir.
  • Turn off gas stove and serve.
