Healthy Matcha Cookies


What exactly is matcha? It is an old Japanese classical green tea which contains more antioxidants than the normal green tea. It is very effective for weight management, energy boosting and more importantly it contains antioxidants which aid in preventing the effect of free radical damage to one's cells. Matcha is a super food that one can add to everyday diet to support a healthy lifestyle. It can be added to smoothies, yogurt, tea latte, water, deserts or used for baking.  The first time I tried matcha cookies was in my financial statement analysis class. A Chinese friend brought it to the class which kinda saved the day as the lecture was super boring!. Although, I didn't eat much as it was just too sugary! Damn too sweet for me and my healthy lifestyle movement...lol! So, I decided to make the matcha cookies using healthy compliant ingredients (at least😆). Guys this is Christmas season and a lot of people will gain loads of pounds. I advise you make your healthy treat and indulge  with caution.





Ingredients

1 cup whole wheat flour
1 tbsp matcha
½ tsp baking soda
2 tbsp raw sugar
1 tbsp coconut sugar
1/4 cup unsalted butter (melted)
1 tbsp vanilla extract
1 egg
1 egg yolk
1/4  cup chocolate chips (melted)

Organic stevia (for decoration)


Preparations
  • Preheat oven to 160 degrees Celsius.
  • Line baking tray with non-stick baking liner.
  • In a bowl, mix the dry ingredients (whole wheat flour, matcha, and baking soda) together.
  • In another bowl, use an electric mixer or a whisker to beat the raw sugar, coconut sugar and butter until well combined. Afterward, beat in the vanilla extract, egg, and egg yolk until light and smooth.
  • Combine dry ingredients into the creamed butter until a blended dough is formed.
  • Roll the dough into a ball and split into two. Using a rolling pin, place the dough on a wooden cupboard and roll the dough out flat.
  • Use cookies cutter to cut out the shapes and place on a non-stick baking sheet to bake.


  • Bake the batter for 8 to 10 minutes, or until edges are lightly browned. 
  • Allow the cookies to cool for 5 minutes and serve.
  • Dip into melted chocolate chip  and garnish with stevia.
