Breakfast on the go: Healthy banana muffins


This recipe is simply tasty with no sugar, flour, butter or egg and fits into the category of either a healthy snack or breakfast.




Ingredients 
3/4 cup rolled oats (oat flour) 
1/2 tsp vanilla extract 
2 ripe bananas  
2 tsp chia seeds - substitute egg 
2 tbsp organic maple syrup or honey (used maple syrup) 
Nut of choice 
1 tbsp coconut oil 
1/2 cup milk1/4 baking soda  

Prep  
1️⃣ In a small bowl, mix one (1) tablespoon of chia seed with three (3) tablespoons of water. Allow the mix to sit for about 5 minutes until it becomes pudding like similar to raw egg yolk.
2️⃣ Place in another bowl the dry mix made of 3/4 cup of oat flour (blend your rolled oats into oat flour) and add 1/4 tsp. of baking soda. Then combine.
3️⃣In another bowl, add all the wet ingredients 1/2 of milk of choice, 2 tbsp. of maple syrup/honey, 1 tbsp. of coconut oil, 1/2 vanilla extract and the chia mixture. You can replace the chia mixture with an egg if you want. Then mix all the ingredients properly.
4️⃣ Add the 2 medium sliced bananas into the wet mixture and roughly mash them up using a fork or simply use a blender to do the mix. Ensure your banana is extra ripe in order to get the sweetness from the muffin.
5️⃣Mix the wet and dry ingredients together. Add the desired nuts of choice (almond, peanuts etc.) into the mix.
6️⃣ Scoop the batter into muffin tins and you can top it with nuts for presentation.
7️⃣Bake in a pre-heated oven at 180 Celsius or 350 Fahrenheit for about 15 mins until a toothpick or knife inserted comes out clean. 
Serve with greek yogurt or peanut butter
