I adapted this recipe from melskitchencafe
and I thought to myself; the taste might be yuck! Trust me it was tasty and
filling too.
So, you'll need:
11/2 cups shredded zucchini
1large egg, lightly beaten
1/2 shredded sharp cheddar cheese
1/4 bread crumbs (preferably panko)
1/4 tsp dried basil
1/4 tsp garlic powder
Pinch of salt
1/8 tsp pepper

Preparations
- Preheat the oven to 425 degrees F/218 degrees Celsius.
- Line a rimmed baking sheet with parchment pepper and light coat with cooking spray or lightly greased an unlined baking sheet.
- place the shredded zucchini in a clean kitchen towel and squeeze out all the excess water over the sink until the zucchini is dry.
- Place the zucchini and remaining ingredients in a medium bowl and mix until combined.
- Drop the mixture by tablespoons on the prepared baking sheet and lightly press the mounds with your hands to flatten slightly.
- Bake for 16-20 mins until the edges are golden.
- Served mine with blended cucumber.
