Flourless Pancakes


Breakfast is the most important meal of the day as some research shows that skipping breakfast is not good for weight loss. While other studies believe skipping breakfast is good for reducing weight. I'm of the opinion that SKIPPING ''breaky'' as the Australians call it is bad! There are so many healthy reduced calories breakfast ideas one can choose from; one of which are flourless pancakes. I love trying and exploring recipes which can be seen from the several options in the photos below. I implore you guys to try them and provide feedbacks in the comment section. Now to the ingredients and preparation.

Ingredients


Option 1  1 ripe banana

5 tbsp rolled oats
1/2 tsp cinnamon
1/2 vanilla extract
1/2 glass of skimmed milk
1 tbsp maple syrup
1 large strawberry for presentation
1 tbsp peanut for presentation 



Option 2 -spinach pancakes 
1 cup rolled oats
1/4 cup skimmed milk
1/4 unsweetened almond milk
1 tsp coconut oil
1 cup spinach
1 egg
1 banana
1 tsp honey
1/2 cinnamon
1/2 frozen mixed berries 
Option 3 
1/2 cup rolled oats
1/4 coconut flour
1/2 glass of unsweetened almond milk
1/2 tsp cinnamon
2 microwave poached eggs for presentation
1/2 tsp parsley
Pinch of salt  
Option 4 - oven strawberry pancakes 
1 cup rolled oats
1/2 cup strawberry
1/4 cup blueberry
1/4 cup chocolate chips
1 tbsp honey
1 tbsp greek yogurt for presentation

Preparation
  • The preparation for all the pancake options is pretty much the same except for option 4 that is OVEN baked. 
  • Mix all the ingredients together in a strong blender and blend until it's smooth. 
  • Fry in little olive oil. For option 4, scoop the mixture in a flat sponge cake pan, sprinkle the chocolate chips and bake in the oven at 180 degrees celsius for 15 mins to 20 mins until a toothpick inserted comes clean. 
  • Serve all options with maple syrup or greek yogurt or berry syrup!
Ps: for the berry syrup I usually combine frozen berries and honey in a microwavable bowl. Then microwave for 2 mins and serve with my pancakes. It's easy!
